Auntie M’s Broccoli Rabe – Grandma Cenza Style

Ingredients:

1 bunch of broccoli rabe

about ½ cup of olive oil

3 large cloves of garlic, minced

2-3 large hot cherry peppers

Directions:

Clean broccoli rabe by removing any large tough leaves.  Cut leaves into 2-inch pieces.  Cut thin stems in half lengthwise and into 1- to 2-inch pieces.  Put rabe in boiling salted water.  When water boils again, remove rabe with slotted spatula.  Reserve cooking water.  Place rabe in tight covered saucepan with olive oil, minced garlic and minced hot cherry peppers and saute over medium heat for 15 to 20 minutes or until tender.  Add ½ cup or more of reserved water, as needed to keep rabe from sticking to saucepan and to create pot juices.

Serve as sandwich.  Halve a loaf of Italian bread lengthwise and cut into sandwich-size pieces (5-6 inches).  Hollow out some of the soft bread insides of each open faced sandwich shell.  Add rabe mixture with some of pot juices.  Salt and pepper, as needed.

Note:  Save remaining rabe cooking liquid and drink as light and tasty vegetable drink or use to cook small amount of pasta.
